Mesa Franca, the reflection of the culinary roots of our Earth

In 2022, this establishment earned the honorable 49th spot on the prestigious list of Latin America’s 50 Best Restaurants.

A place that pays tribute to Colombia’s culinary roots, reinventing exquisite dishes and cocktails that highlight native flavors. Traditional techniques and Colombian ingredients take center stage in its kitchen.

Mesa Franca embodies a warm and welcoming concept where everyone gathers and feels at home. Today, it has materialized in the capital with its remarkable culinary offerings and charming spaces that combine lighting, music, and a cozy atmosphere in every corner.

It is the result of the vision and passion of three talented professionals with extensive experience in renowned kitchens around the world. María Paula Amador, an expert in service and management, Tom Hydzik, a master mixologist, and Iván Cadena, a talented chef, brought this project to life in 2016. Since then, it has been acclaimed for its culinary and cocktail innovations.

The fusion of experiences and talents is reflected in an irresistible and deeply rooted gastronomic offering. Dishes like the exquisite corn toast with smoked bone marrow mayonnaise, tuna crudo, avocado, and lacto-fermented chili, or the pork belly with peanut purée, caramelized pears with arugula, and sourdough bread, are just a few of the surprises. “We are a place of constant evolution, not a static menu; we are always creating,” noted María Paula.

And as if all of this weren’t enough, the experience is meant to be fully enjoyed with the creations of Tom, the master mixologist. A Polish native who discovered and fell in love with Colombian flavors, he infuses his fascination into each of his masterful blends and mystical cocktails. Full of color and taste, his creations highlight Colombian ingredients—citrusy, smoky, bitter, sweet, or spicy elements—bringing them to life in every drink.

Thus, Mesa Franca is the perfect gateway to explore, experience, and savor Colombian gastronomy. Its success lies not only in the ingenuity of its three creators but also in its use of fresh, local, and unpretentious ingredients.

Without a doubt, these interpretations will also be reflected in their new project, Colorado, a cozy and versatile space that adapts to every occasion: “A place where you can go at any time, a more everyday spot,” they emphasize.
